Personally I love to slice them up and serve them sauteed in butter and garlic with a steak. I like white, portabello, crimini or shitake. As a side dish they work with a keto diet. A nice tenderloin with a side of sauteed shitake and maybe.
Many people hate them though. I'm not sure if it's the texture.... I actually had a girlfriend that was so grossed out by them that she wouldn't kiss me after I ate them.
Mushrooms are one of the greatest things in the world. I love them cooked in many ways.

If I'm in the mood for a sandwich I slice a grilled steak and sautee bell peppers with the mushrooms, garlic and onions. Then I layer it on lightly toasted garlic butter French bread and add monterey jack and mild cheddar.
I like adding mushrooms to my spaghetti sauce. I also like mushrooms on pizza with sausage and peppers.
I've found that many people who don't like mushrrooms really don't like them chunky in sauce or on pizza, etc. I usually dice them pretty small and they have no problem with them then.
Hate mushrooms. I was told growing up that I'd come to like them when I was older, as with many other foods, and I did. I love all sorts of foods I hated as a child, except mushrooms. I never grew to like them.
I can cook them really well though. I cook the bf steak with like a mushroom sauce, or I do large stuffed mushrooms, but I don't eat them. I think they're ick. Yuck, won't touch them.
There are so many ways to enjoy them. Breakfast, lunch, dinner... little bites. I had a surplus of them last year, I dried them. I am still enjoying that bounty!

When I did my residency/fellowship in Missouri, I enjoyed going out with friends in the spring hunting Morels, by far my favorite mushroom, but I like them all.
They are best enjoyed at Greatful Dead concerts but I like the other kinds as well.. I'm a big mushroom fan..

Quite fond of mushrooms. Personal favorite are the dried shitakes my wife uses in her Chinese cooking, but I also enjoy white mushrooms, portabellos, and others. Had some really nice stuffed portabellos about a week ago.
When my wife and I were getting serious I told her I hated mushrooms, which I did. She told me that was going to be a problem because she loved them and cooked with them almost daily. Basically she told me "get with the program". So I tried them cooked in food a few times and fell in love with the little fungi. Now I can't believe I spent so much time hating them.
Hated them as a kid, never knew what hot or warm pizza tasted like as parents always ordered mushroom and pepperoni. Mine was always cold by the time I picked all the mushrooms off.
Still dislike them as an adult. For me they have a nasty dirt like flavor... The husband says, trying to get me to eat them, that they don't have any flavor. The logical part of my brain says why pay for the extra topping on the pizza then.....
I have gotten better about not gagging violently when one sneaks through..

I don't know jack about mushrooms except that I've never had one I didn't love. My local grocery store only has the white ones. We go through at least a pound every week, usually fried in butter and white wine before adding to whatever. If I'm in Albuquerque I'll look for any other 'shrooms. My husband has to beat me off with a stick when I steal them raw while he's cutting them up.
Did I mention psilocybin? Haven't had any in a while, but I never say no.
They make any dish better and I feel that they are underutilized. In my opinion, mushrooms, broccoli, carrots, and bell peppers could be added to any meat dish and it would improve the flavor.

Love mushrooms! I've always used fresh but recently bought two bags of dried to have and use while dealing with possible Covid19 shortages. They are wonderful, more substantial, maybe a bit more flavorable and a more chewy than fresh. They brought a whole new dimension to cooking with them.
I used to hate them. The texture and the taste. But I try most things more than once, though I wait a few years. I don't mind them now, but I'm so used to not eating them I forget they're okay and never get them lol.
I won't eat them by themselves, though. That's just... too advanced for me.
I love mushrooms. Even the farmed ones, which I can happily eat raw once I have washed them. Or gently sautéed with butter and a little soy sauce until the liquid is reduced, then eaten on toast.
Nothing's ever as good, though, as field mushrooms gathered early in the morning and taken straight home to be fried with bacon and black pudding for breakfast.
Now is a great time of year for foraging in the Scottish woods for chantarelles, which are really special.
