The first two Godfathers, I'd say. Not the most realistic, to be sure, but almost Shakespearean in their scope and feel with some brilliant writing and acting.
Then would come Scorsese's mob movies like Goodfellas and Casino. Less epic, more about the gritty lives of the guys in the trenches.

I was going to post a link to the trailer, but the entire cast is children.
Scott Baio and Jody Foster starred in it. Great soundtrack. Machine guns
shot whip cream, and people got pied in the face. LOL. The gangster
cars were pedal cars, like the Flintstones, but with pedals. Fun, fun movie.
But The Departed is a great movie.
Does the De Palma Untouchables count? I mean, it was focussed more on Elliott Ness' team trying to bring down Al Capone but the backroom machinations of Capone and Frank Nitti played a big role.
No question about it it's GOODFELLAS.

Goodfellas is my favorite by a long shot. Love that continuous shot as they enter the restaurant.
Goodfellas. If you really enjoy it, find the book, Wiseguys, that it is based on. You'll see how great of a job Scorsese did at bringing a true story to the big screen. Helps to have the writer do your screenplay, though. Ray Liotta listened to the tapes Henry Hill made for the writer, to get his voice down. The voice-over in the movie encouraged the team making Shawshank to make use of it as well.
The special edition with commentary and extras is really worth picking up.

I love Goodfellas, but I think that Casino is probably the objectively best mafia movie. (And very underrated).
I do think that The Departed will be seen as a "classic in 15 or 20 years.

In addition to the Goodfellas, though this is not a movie, the video game Mafia III tells a fantastic story despite rather repetitive game play. It takes place in the post-Vietnam era in a fictionalized city based off of New Orleans. It really emerges the player into it's world and deals with many different themes.
