My late Mother's Pineapple Upside-down Cake. But today I have to "settle" for a concoction my daughter makes for me:
she takes a plain fruit preservatives jar and fills it with sugarless chocolate pudding, strawberries, a touch of rum, and some sugarless Cool Whips. She gives it to me very cold but not frozen, and of course the special love only a daughter can give you.
I am so proud of her in making this for me, and sooooo grateful!
I mean, c'mon, how can you beat a dessert like that?
