I love watermelon and feta skewers...especially with mint.
There's a place in my town that has an appetizer that is made of watermelon, mint, basil, pork belly and drizzled with a sweetened balsamic reduction. Sounds really weird but it's so damn good. Pretty easily replicated at home.
Gawd this brings back memories of my craving durning pregnancy. Anything with peanut butter. Chili? With peanut butter. Broccoli? With peanut butter. Chocolate ice cream? Yup you guessed it, with peanut butter. I even ate a liver wurst sandwich with... Peanut butter. Thing is that your tongue seemed to stick to the woof of your moowf.
Vanilla ice cream and a smashed up penguin bar (I beat it up with a rolling pin while it's still in the wrapper) crumbled over the top. I know it's just ice cream with bashed up chocolate biscuit bar on it, but there's something very satisfying about whacking it while it's still in the wrapper!
Blueberry maple balsamic sauce over a grilled pork tenderloin.
In a pot, pour equal parts maple syrup and balsamic vinegar (approx 1/2 cup each - tweak to your liking) with 1 cup blueberries (fresh or frozen)
Bring to a boil and remove from heat once reduced by half.
After your cooked and covered pork tenderloin has rested, add the pork juices from plate to the pot, stir and heat through.
Slice and serve with sauce drizzled over the meat. (Yes, it's an odd purple/blue sauce but it's soooo good)
