I've always pronounced it as Gif, but I read somewhere a couple of days ago that it is actually Jif. NEVER heard anyone else call it that though, and not sure if it's true.
I've only heard it with the "J" sound.
I've only ever said Gif, because as @Buz said, Jif is a peanut butter product
It stands for "Graphics Interchange Format" so i say GIF as in "Go". I also say "AV" for avatar, not "AVI", because AVI is a video file.

I don't even know what it means when shown in its non acronym form never mind how to pronounce it. Does it mean hard core sexy picture swopping?

Well I've never "heard" it called anything LOL! But since these are .gif files according to the computer, then gif is what I would go with. Just like .com .jpg .net etc.

Well I looked it up on Google....and it stands for Graphics Interchange Format.....so in my little mind gif sounds like it is how you would pronounce it....
