Well, if we're going all biblical here, how about John 1:1 (each section of the Bible is technically a "book" after all)?

Echoes the opening of Genesis but takes it in a different direction.

Another favorite, this time from Shakespeare (Henry V):

Song is hard. So many good ones to choose from. However, the opening of Leonard Cohen's Democracy has always sent chills up my spine. Indeed, Cohen's lyrics are full of great ones (he's also an award-winning poet after all):
