Growing up, I had a double good experience with traditional bread pudding, in that my grandma made some of the best German style bread pudding, and then my good friend in high school live most often with his grandmother who was native Indian from Mexico.
Sad to say, I never wrote down either recipe, and there are so many variations, close but not quite the same.

Walking slowly, cooling this morning; gazing at the slightest of waxing moon, I slip on through the door at AHT&CB, seeking some of Bertha's nectar, to join me And Mr. Bailey's for breakfast fare, getting a front row seat for Curvy's next showing, "Flesh-Dance", no doubt an eye-catching, bit of early morning excitement. 
There seems to be only a hint of the aroma, left in the air from last evening's food-fest of Jim and Pixie. Sitting here, eyes closed for a bit, as a smile comes about, wondering, as an imaginary image to mind.... a bit voyeuristic, I am.
Glancing out the window, I now see the slightest of morning light in the East.... better scoot, my turn to water the garden....
Let the day begin.... it 5:00 a.m. somewhere....

Added spinach along with feta cheese instead of goat cheese..... what was on hand.WGP14o8AGeeSyJzI
I also grilled / roasted the beets , using Apple wood, getting that sweet smoke on the outside, before peeling.
