I have a few new story series in the works, but I have a question on how to organize them.
1. If I have a really long drawn out story that has not reached a sex part yet should I make it an extremely long story or post it as non-erotic and start chapter 2 with sex?

Readers tend to lose interest in long stories, unless they are exceedingly well written. With that in mind, you should make sure there's at least some love interest (not necessarily sex) going on, to hook the reader into wanting to bookmark it / read consequent chapters.
Stories are rejected programmatically, if much over 10,000 words, so you will need to make sure your Chapters are shorter than that.
The story doesn't need sex to be erotic but what will you use as the hook to make the readers come back? Investment in the characters? Unresolved sexual tension? Good luck with that, it's a worthy goal but it's a tough ask. Readers have a lot a choice and they have favourite authors, they also only have limited time. Why should they bother committing to a long drawn out series by you?
Maybe start with some short, self-contained stories to develop interest in your writing.
