I would like to suggest a sandwich that I discovered in Italy recently.
Ingredients:
Ciabatte,
chicken leftovers,
some pancetta
fresh rocket
olive oil
cranberry sauce
Method:
Take some ciabatte bread and cut into two reasonably decent slices. Drizzle some olive oil over both halves.
Fry the pancetta in a little olive oil until it just starts to go crispy. Take it out of the oil immediately and dab dry in some kitchen paper.
Take some cooked chicken, maybe from a leftover Sunday dinner and build up onto the ciabatte and then add a layer of pancetta. Finally put on some fresh rocket and a few dollops of cranberry sauce.
It is absolutely delicious!

My favorite by far is just a club sandwich. Second is a Ruben. Third is a Monte Cristo.
My Favorite is Grilled Chicken Chilie Club
Grill or broil 2-3 chicken breasts in the oven, dice or shred meat when its cooled.
Cook Bacon until crisp but not burned. You want nice flat slices.
Stir together 1/4 C Kraft Mayo, and a Tablespoon of Green Taco Chilie Sauce, a bit of fresh ground pepper and Johnny's Seasoning Salt.
Add diced Chicken to Mayo mixture. Add more Mayo if necessary.
Spread Chicken on Toasted Wheat (I like 12 Grain), Add Slices of Bacon
Top with melted Pepper Jack or Sharp Cheddar, Sliced Tomato, Lettuce and slices of Banana Peppers or diced Ortega Green Chilies.
Sprinkle with a bit of pepper and top with other slice.
These are pretty filling sandwiches by themselves, but it goes great with Pasta Salad.
