I always have bitters, a good infused gin and bourbon on hand. My favourite mixed drinks tend to be dry with their sweetness only coming from fruit or the infused flavor of the gin.
I make an old fashioned with gin infused oranges and bitters on top that could probably cure cancer.

Seriously, I maintain a very well-stocked liquor cabinet--my mum always said that dinner guests wouldn't care if the main course was terrible as long as I could mix a decent drink. I also keep a copy of the Bartender's Bible and some other specialty drink literature in the liquor cabinet.

Sweet vermouth, gin, dry, fino and cream sherries, sweet and dry marsala, and then the usual assortment of scotch, vodka, tequila, Triple Sec, brandy, etc. to pretty much accommodate most tastes for before, during, and after dinner consumption. But most especially a wide range of wines, especially the whites, including some many folks are not familiar with such as Gewürztraminer, and Lambrusco, which is always a fun experience on the palate. Do wines/fortified wines count or is those only to be about the "harder" stuff? By the way, I fiind Trader Joe's to have an excellent range of selections of wines. There are several TJ's in my part of the Salish Sea.

I will always have either a bottle of good bourbon or Irish whiskey on hand unless I'm in the middle of polishing it off. Preferably I will have both.
In the cabinet up high there will always be a bottle of white rum and vodka for mixed drinks since they go with just about any soda, juice, or tea. There will also be a few other bottles of random flavored spirits (right now there is a bottle of pumpkin-spice rum and a fifth of peppermint-something to the back) but it's really anyone's guess as to what will be found.
For mixers, it's all about grenadine, blue curacao, and lime juice. If I'm feeling especially dapper I'll stock up with simple syrup and orange bitters.

Nothing these days, but I used to have a bottle of Chambord (named for the French castle) and Bailey's around many years ago.
Always: Broker's gin, Larceny bourbon, Reyka vodka, Paddy Irish whiskey, Johnnie Black scotch, Knockando single malt scotch, Mount Gay Silver rum, Gosling's Black Seal rum, H cognac, a selection of liqueurs, a few bitters and flavorings, and a few bottles of homemade liqueurs, and whatever else happens to be on hand from having caught my eye.
