My Mum says you have to put eggs in the fridge, which I do. My gf says that's crazy and her Mum has always kept them in the larder

Who's right?

My understanding is that there is no definitive answer to this... I watched one of these cooking programmes a while back and they have callers and one who asked your question. One chef said fridge the other said not.

edit - apparently there is a right way up too!

I don't know of a supermarket that doesn't sell them from normal shelf space rather than a fridge unit or chilled shelves. Having said that I put eggs in the fridge when I get them home.

On another note I apprehended a thief on Fryday. He tried to poach some eggs. I fried to catch him and managed to crack him on the head. He ended up in a scrambled heap on the floor! It was very eggciting, especially as everything turned out all-white in the end

That's quite an eggstravaganza. You did an eggcellent job of handling that. Did anyone egg you on?

I've only ever seen people put eggs in the refrigerator. That's what I do.

You never could cook. A larder is a cool area for storing food prior to use. Larders were commonplace in houses before the widespread use of the refrigerator.

You'd starve to death if it weren't for pizza and subway.

My larder is a cupboard in my kitchen where I keep things like gravy salt, custard powder, biscuits (cookies) and stuff like that.

It's for stuff that you want to keep cool but not chilled

Wow! I thought they went bad outside of the fridge! Interesting. (and yes, I had to look up "larder" too!)

I guess by my statement, you know I put them in the fridge. Which way do they keep the best?

Interesting question.

I put my eggs in the fridge.

My grandparents had a chicken coop, and would put the eggs after collecting them in the basement where it was cooler, but they never (that I know of) put the eggs in the fridge.

I have a number of baking recipes where it calls for room temperature eggs to be incorporated.

I believe either way is ok to store them .... just as long as there are no cracks in the shells - I wouldn't use those for consumption.

I didn't know this until a couple of years ago but in the US, our eggs are sold in the refrigerated section but in some parts of the world, they aren't. So we have always refrigerated ours since that's how they came.

I grew up on a farm. One of my daily chores was to feed the chickens and gather the eggs. We washed the poop off the eggs and placed them in a wire egg basket, never put them in the refrigerator. That being said, the eggs bought at the supermarkets are refrigerated, so we keep them in the refrigerator at home. Now the question I have: who first saw an egg pop out of a chicken's ass and decided that was something good to eat. I don't eat eggs and rarely eat chicken...they are nasty animals.

My guess would be that man first started eating eggs after watching animals eat them. RAW! Only after he learned to use fire did he get around to cooking them (probably by accident).

I come from a farming region and have friends and family members who are farmers. We have always kept eggs in the fridge but I suppose any cool area would do.

From what I've heard, it doesn't actually matter either way unless your a baking aficionado, when I believe the eggs are best used at room temperature for making that cake rise better. Again, like most things it's a personal preference I guess.

I can't believe I'm posting on this!!

My mother has started keeping chickens, and learnt from the farmer who sold her them, that supermarkets typically store eggs for 6 weeks (refrigerated I guess), before they hit the shelves, and are still called "fresh".

I store mine at room temperature. If they are within a few days old (a week in colder weather), you can quite safely use them for carbonara sauce (mix a few raw eggs with parmesan if there are 2-3 of you, pour on to the just cooked pasta and stir through for a short while), instead of making a full-on white sauce (who needs all that flour / gluten in their body?).

I have a Japanese friend who sends me some good ingredients quite often. Bonito shavings (Katsuobushi) mixed into raw egg, with a splash of soy sauce, and then mixed into freshly cooked rice, makes for a delicious breakfast.

Bottom line, unless your climate is really hot, I'd not worry about keeping eggs in the fridge. And buy them directly from a farm if you have a local supplier.

We always keep eggs in the fridge, but I'm not sure it is absolutely necessary. As long as you don't get them wet they are impervious to bacteria, unlike duck eggs. I am old enough to remember when we stored eggs in isinglass in a bucket.

They're much easier to work that way, especially if you're baking and/or separating the yolk from the white.

I can't stand trying to mix cold eggs.

Just ask the experts...

http://www.takepart.com/article/2014/07/16/should-you-refrigerate-your-eggs

And if you want to find out if your eggs are still good, do this test...

Just fill a bowl with cold water and place your eggs in the bowl. If they sink to the bottom and lay flat on their sides, they're very fresh. If they're a few weeks old but still good to eat, they'll stand on one end at the bottom of the bowl. If they float to the surface, they're no longer fresh enough to eat.
