One trilogy of books that I love deeply has never been adapted to the screen, and I do hope that eventually someone will do The Fionavar Tapestry justice on the big screen, because I think they would make a fantastic trilogy of fantasy movies.

Really, anything by Guy Gavriel Kay. His historically-based/inspired fantasies would all work well as movies, too. Tigana, for instance, might actually make a better film than Fionavar.
(Footnote: IIRC, a friend took an English lit course on fantasy back at the time Fionavar was just out and the prof actually got Kay in as a guest lecturer.)

I think a lot of people don't know it was based on a book, to be honest. I did but not until after I saw the movie. It certainly was a case of the movie outstripping the book on many fronts so I think people could be forgiven for missing the book.

The Spy Who Came In From the Cold - Classic early Le Carre that got a good book adaptation.
Tinker, Tailor, Soldier, Spy and Smiley's People - TV series rather than movies, but both books and adaptations are good. There is a more recent movie of the first but I haven't seen it.

I guess The Shawshank Redemption. A lot of good movies based off Stephen King's books, but that's my favorite. I saw the first Mortal instruments movie, and that wasn't too bad. A few select others are good too.
