As with many well-intentioned listings of gender identities and expressions, this is trying to capture an essentially infinite number of descriptors into a relatively small number of terms. The terms have to express the cross product of assigned sex at birth, self identification of gender, variability of sex/gender identities over time, who you like to be with emotionally, sexually, physically, how intense your libido is (and variations of that over time), etc. although some of these are categorical variables (generally only 2-3 sexual assignments at birth), many are more nuanced, on a spectrum rather than a finite number of choices.
If part of the reason for this is to allow others to search for kindred spirits then it might enable finding someone else who has a label that attracts you. It could also be used to exclude people in categories you don’t want to explore.
A fill in blank allows more nuanced choices and less easily excluded individuals. And of course you might be delightfully surprised by a person in a category you might not have chosen to search out.
