Speak French fluently ( I took some in high school and college but am bad at it).

Well the list is long. Even though I taught for 18 years I didn't master a foreign language.
I'm just now learning to write fiction. I taught the principles of creative writing but never mastered it myself. I'm grateful for the way my first two offerings have been received.
I can play the guitar and I can sing but I'd like to put them together. Every time I try, I either screw up the lyrics or the cords.
Surfing. My husband is a great surfer and I try but I end up sucking sand way too much.
The ability to play baseball again---actually I'd settle for soft ball at this point. I miss nothing more in my life than the joy I got at playing that game.

2. To speak in French, Spanish, Chinese and learn Sign Language.

The 'attainable' part is the real sticking point! What's attainable to some, may not be for others. There are skills that I've tried desperately to learn, that others seem to be able to master, but me? Not a chance! I can play nearly any music on the piano by ear, but I simply cannot learn to read music, and it drives me crazy that I'm not able to do what is so simple for others to learn!
I can dance, but I can't learn figure-skating!
I can swim like a fish, but I can't dive worth shit!
Tai-chi and kendo. Haven't tried. Haven't failed... something to be hopeful about learning!

As for you ladies who can't sew, I can sew a bit if necessary, - very roughly, but my wife was very good with a sewing machine. We had two girls, and she made all their dresses.
