Have any of you ever had the desire to rewrite a submission once it was posted? Should it be added to or have paragraphs removed or just delete the whole thing and start all over again?

Having edited for numerous authors here, my proof-reading skills have improved over the years to the point where I see my early stories could stand some re-editing. But nobody reads my stories anymore, so I figure, why bother?

You can edit it after it's been posted. I have done it a bunch, sometimes compulsively. Just don't copy and replace with a whole new version, cuz that is a hassle for the mods, who have to re-verify. Just make the changes in the Lush text editor and resubmit.
