Well Dexter is in its final season and I think the writers could do so much more to extend it at least for another 3 years.
Since Firefly has been mentioned a few times, I will go with Freaks and Geeks.
You know, I was going to say Firefly, but then realized that Serenity kind of tied up the loose ends on that series and besides, didn't they kill off Wash?
So now, I can think of a few shows that I enjoyed once I discovered them on Hulu .... John Doe was one of those shows that I really loved, only to discover that they cancelled it at the end of the first season. Another show that I enjoyed was Flash Forward. Oh and The Firm.
Though I must admit that I don't watch TV much.

I would say 24 but that is coming back, albeit in truncated form, so I'll go for the original Hulk series with Bill Bixby and Lou Ferrigno.

Firefly and if not that then Justice League Unlimited
Pushing Daisies and Doll House deserved more seasons to spread their stories out, compressing it all in a short period made their endings horrible. Stargate Universe and Drive may not have been great, but I wanted to see them through their stories. And I'm not looking forward to the second ending of Futurama. I wish that show could run forever.
But like every other person here, I want to watch new Firefly more than anything else!
Lost. So they could actually explain what the fuck is going on. Started out so good the first three seasons then it just nosedived after that. The only show to take a worse nosedive, in my opinion, is True Blood. At least I finished watching Lost.

Seinfeld and/or Sopranos. That would give the writers time to write a real ending.
there are so many to choose from and i know im gonna overlook some....first thing that comes to mind is The original Star trek, Miami vice, Magnum PI and countless others...but for the most part, those shows ran a long time and were good enough.
but for the purposes of this question. Im gonna choose shows that were cancelled before season 5, which is usually when a series is at its high point..
4) Now and Again: Eric Close and Denis Haysbert, a 90's version of The six million dollar man
3) SWAT: cancelled after one season. controversial for its violence depicted.

1) Airwolf: ran three seasons (the fourth season produced by a canadian studio doesnt count) with one of the best tv themes ever. The first season and its cold
war stories were fantastic, as the seasons progressed Don Bellisario left and the show became more family friendly, to the detriment of the show.
honorable mention: Baa Baa Black sheep: robert conrad and the exploits of Pappy boyington during WW2
Probably some older shows I wish had gone longer. But off the top of my head: Rome, Stargate: Universe, Last Resort, Melrose Place(the newer one)
