I love a good Caprese salad. Quick and easy with hardly any prep. Plus it's pretty!



Local vine-ripe tomatoes are the best. Fresh and moist (I hate that word) mozzarella. Fresh young basil, extra virgin olive oil, and salt & pepper to taste. Can't be more simple than that.

Sidenote: There are many variations to this. Some add capers. Some use a vinaigrette instead of just plain olive oil. Others use roasted red peppers instead of tomato. You can kind of play with it and still keep it simple, which I love.

i love rice and pandas...perfect mix smile
easy to make, use a good japanese rice or long rice...no instant! wet hands with salt water and shape balls while rice is kinda hot. then cut out dried seaweed sheets shapes, it looks like paper. i cheat and use a panda shape punch

Yes I'm on a cucumber kick. I love cucumber during the hotter months. Anyhoo, here's a cucumber margarita:



Salt, for rimming the glass
Ice
2 1/2 ounces Cucumber-Infused Tequila
1 ounce fresh lime juice
1 ounce simple syrup (see Note)
1 cucumber slice, for garnish


Wet the rim of an old-fashioned or margarita glass and dip it in salt. Let stand until dry. Fill the glass with ice.
Fill a cocktail shaker with ice. Add the Cucumber-Infused Tequila, lime juice and simple syrup and shake until well chilled. Strain the cocktail into the rimmed glass and garnish with the cucumber slice.

NOTE
To make simple syrup, combine equal parts sugar and water in a small saucepan and bring to a boil; stir until the sugar dissolves. Let the syrup cool.

The Ginger Bourbon Lemonade.

The bar (actually, it was/still is a Speakeasy) I frequented in college made a killer version of this drink and it definitely looked a bit more masculine. Anyhoot, I love this drink. Gives me the happy buzz.




Another favorite comfort drink, but one that is HELLA strong is the Apple Pie. Yea, it really does taste like apple pie.


Ingredients

1 gal apple cider
1 gal apple juice
6 cinnamon sticks (3 inch)
1 12 cups white sugar (taste)
1 l grain alcohol (proof, everclear)


I'm sure the girl I was with romantically (kind of) at the time made it far stronger than that, but I have absolute NO IDEA what recipe she did use. Only that half a glass about had me done without eating a ton of food.
Even though Peppermint Bark is usually reserved for the holiday season, I still make it year-round if I'm craving it enough.

Awww... I always end up buying a tin of this at Williams Sonoma during the holidays. I *love* it. I should try making my own this year. Or at least pretending I made it on my own.

The Ghiradelli ones are also really really good.



They're actually the reason this recipe is my fave. They're almost exactly the same. Plus it's easy. (Magic bullet or something like it works great for crushing the peppermints really fine).

Vegan Tacos:



The main focus is the 'meat' they make out of nuts. It's really yummy. I'm vegan once a week and vegetarian twice a week. So I don't eat meat 3 days out of the week, which really isn't that hard to do. Sometimes I go meatless more days than that without realizing it. The fun thing with this is that whether you're vegetarian or vegan, you can still enjoy it. Make the 'meat' and dress up the taco any way you like. Some people substitute lettuce for a hard shell or a soft tortilla.

Raw Nut Meat
Makes about 2 cups "meat"
1 cup almonds, soaked 2 hours
1 cup walnuts, soaked 2 hours
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon coriander
Dash garlic powder (or fresh garlic to your liking)
Dash cinnamon
Dash cayenne (for a spicy meat)
1 tablespoon balsamic vinegar
1 tablespoon tamari (if you are soy-free use a dash of sea salt to season)

Preparation
Nuts can be soaked together. After 2 hours drain nuts. Blend in a food processor (not blender) for about 20-30 seconds to get the nuts chopped well. Add the rest of the meat ingredients and blend, scrapping down the edges of the bowl a few times to incorporate all the ingredients. Blend until your preferred level of chunkiness. I like my meat crumbly and not a smooth paste (see photo). Season with salt if needed.

Sounds pretty intense. A friend made them today and I tried it. Not nearly as overwhelming as it sounds. It's actually quite smooth on the palette.

If it's got gelatin, instant pudding and cream cheese in it, it's not a key lime pie. It's something, and it may be delicious, but it's not a key lime pie. It also has Persian lime juice. It's more like a lime cheesecake. Key lime pie is made with key limes. Key Limes You can put some zest in for more flavor, but I never felt the need to do that.

I feel like sharing my comfort food...this is what is called Huli Huli Chicken. it is served in a plate lunch which is like our fast food. Chicken with sticky rice and either some veggies or mac salad.





Ingredients:

3 broken fryers, split or quartered
1/4 cup catsup
1/4 cup shoyu (soy sauce)
1/2 cup chicken broth
1/3 cup white wine
1/4 cup frozen pineapple juice concentrate.
pinch of fresh or dried ginger.
drop or two of worcestershire sauce.
Procedure:
Mix ingredients in bowl, brush over washed chicken splits. let soak for 4 hours to overnight.Grill over barbecue, turning and basting with sauce until it is done (about 40 minutes).

Omg... now I want it even more! I don't mind eating pretty food.

Although when I was a kid, I had serious issues with eating chocolate easter bunnies. Not kidding. I usually just saved them until the chocolate spoiled - I felt like when I would bite into the chocolate ear, I could hear the silent bunny-screams in my mind. I was an overly empathetic child.
Had sort of an impromptu cookout at my place yesterday. I made these yummies.
