Yes I'm on a cucumber kick. I love cucumber during the hotter months. Anyhoo, here's a cucumber margarita:
Salt, for rimming the glass
Ice
2 1/2 ounces Cucumber-Infused Tequila
1 ounce fresh lime juice
1 ounce simple syrup (see Note)
1 cucumber slice, for garnish
Wet the rim of an old-fashioned or margarita glass and dip it in salt. Let stand until dry. Fill the glass with ice.
Fill a cocktail shaker with ice. Add the Cucumber-Infused Tequila, lime juice and simple syrup and shake until well chilled. Strain the cocktail into the rimmed glass and garnish with the cucumber slice.
NOTE
To make simple syrup, combine equal parts sugar and water in a small saucepan and bring to a boil; stir until the sugar dissolves. Let the syrup cool.

Make a graham cracker crust, or buy one already made.
Whisk together 4 egg yolks and 1 can of sweetened condensed milk then whisk in 1/2 cup of key lime juice. Don't use the green or Persian lime, they're not the same thing, then fold in 2 beaten egg whites. (Use the other 2 egg whites to make an egg white omelet)
Put the filling into the pie crust, spreading it evenly, and bake it in a 350 degree F. oven about twenty minutes.
The people who originally made the pie didn't bake it at all, but now people do because they're afraid of salmonella. It will actually set up in the refrigerator without any baking, but the egg yolks will still be raw, and you might get sick.
Put some whipped cream on it if you want to. If you don't want to use the 2 egg whites to make an omelet, but want to make meringue, you can do that too. Find someone who knows how and ask them for a recipe. Key lime pie should have whipped cream.

The fish is then hot smoked at temperatures between 120 degrees F to 180 degrees F, fully cooking the fish.
