Scottish people will know what I'm talking about: Stovies, a meat and potato stew. Hubs’s mum was Scottish and passed the recipe down to him. It's about the only thing he cooks.
Fry onions in beef dripping, add diced potatoes, cook, cover, add stock and seasoning, then finally, the remains of yesterday’s roast. Add gravy if you like. Simmer and serve.
It sounds simple, but it’s actually really nice. I had never had stovies until I met hubs, but I'm a fan.
