Pancake Day
The classic Canadian way to serve is a pile of 'em smothered in maple syrup - real stuff not flavoured corn syrup. Perhaps you refer to crepes with the term "filling", however, my ideal way to eat pancakes is to put the topping on and then roll it up and have a nosh :P So it's kinda a filling.

Oh, those are the same as what we call pancakes and crepes respectively here in Aus...
I've never had butter on a pancake, nor have I had anything savoury such as bacon.
And we were too poor for fancy fruit like berries and such.
Maple syrup, at least in my family, was non-existant, we only had honey or golden syrup.
Lemon juice and sugar was common in my family, but I've no idea if it's common countrywide
