Personally I think eggs have no place in chicken salad. I'm on the fence about using celery. I like mine with both white and dark meat chicken, pickle relish, minced onion, dried cranberries, granulated honey and of course mayo. And if I really want to be bad, bacon of course. I've also been known to slip in BBQ sauce and cheddar cheese. I also prefer the chicken finely minced and not too chunky but not pureed creamy either. Served in lettuce cups, or on English muffins or potato bread. Yum

Chicken salad. Keep it simple. Ground up white meat chicken, Duke's mayonnaise, and pickle relish. Spread it thick on fresh loaf bread with lettuce and tomatoes. Have it with Ruffles and sweet tea.

I just eat with a fork because I don't eat bread.
